In order to make the system fully emulsified, the emulsification time can be determined according to experience and experiment. In general, with a homogenizer (300r/min) emulsification, only need 3~10min.
3. emulsification temperature
Effect: The emulsification temperature has a great influence on the emulsion, but there is no strict limit to the temperature.
Determining factors: the emulsification temperature depends on the solubility of the oil and water phases, the melting degree of the high melting point substance, the type of emulsifier and other factors.
Generally, the emulsification temperature is controlled between 75 and 85 degrees Celsius, and the temperature of the oil and water phases should remain the same. If there is a high melting point in the oil, the emulsification temperature will be relatively high; if the viscosity increases during the emulsification process, the emulsification temperature can be appropriately increased; if the emulsifier used has a certain phase inversion temperature, the emulsification temperature should be selected around the phase inversion temperature.
4. stirring speed
Moderate stirring speed can make oil phase and water phase mixed.
Too low a stirring speed obviously does not achieve the purpose of adequate mixing.
If the stirring speed is too high, bubbles will be brought into the system, making it an oil-water-gas three-phase system, thus making the emulsion unstable and affecting the appearance of the emulsion.
